Sausage and Peppers Recipe

Here is a really easy recipe for Sausage and Peppers.  It was my mom’s recipe and one of my favorite meals from childhood. This makes enough to feed my husband, myself and our three kids.

Sausage and Peppers

Ingredients

  • About 8 links of Italian Sausage (I usually use 4 links hot, 4 links sweet)
  • Two large green Bell Peppers (more or less, whatever you like)
  • One onion (any size, depending on how much you like onions!)
  • One 15 oz. can of Tomato Sauce
  • About 7 oz.  of water

This recipe is very flexible.  You can change amounts of the sausage, peppers and onions to suit your taste.

  1. Remove the sausage from it’s casings.
  2. Cut up the peppers into chunks.
  3. Slice the onions (don’t chop small)
  4. Break apart sausage in a frying pan or pot large enough to hold all of the ingredients.  Cook over medium heat until sausage is cooked thoroughly and no pink shows. (If your sausage is very lean, you can add a tablespoon or two of olive oil during cooking so it doesn’t burn onto the pan.)
  5. Once the sausage is cooked, add the peppers, the onions, the full can of tomato sauce and the water.
  6. Stir it all up.  Bring it up to a simmer.
  7. Simmer, covered for about 20 minutes to cook the vegetables and allow all of the flavors to come together.
  8. Serve on your favorite rolls!

    SOunds tasty indeed! Tonight we were supposed to have curried cod soup and homemade bread but instead I made a curried cod stir fry with brown/wild rice: divine! I’m sure this was every bit as delicious!!
